This recipe is an amended version of one I found online. I eliminated the sultanas as Master S only seems to like them some of the time and I used agave nectar instead of the honey or maple syrup as suggested. Agave nectar is a much healthier option for natural sweetening and is found at any major supermarket or health food store.
I made a batch of mini muffins (12) for my son’s daycare stash and then the rest (4) as normal sized muffins.
Ingredients
2 ripe bananas4 dessert spoons agave nectar
4 dessert spoons extra virgin olive oil
2 teaspoons vanilla essence
1 and a quarter cups wholemeal plain flour (best if the pack says 'whole wheat')
1 teaspoon baking powder
1 teaspoon baking soda
Muffin cases (mini or regular)
Method
- Preheat oven to 180 C
- Add agave syrup and oil to a large bowl.
- Add bananas to bowl and mash
- Fold in remaining ingredients and mix.
- Line Muffin pan with muffin cases and spoon mixture into muffin cases
- Bake for approximately 15 minutes.
