This is our basic pancake recipe but I often add fresh blueberries or grated apple to the mixture for something different and to boost up the healthiness. Master S likes them just fine with only the cinnamon though.
Ingredients
1 cup wholemeal self raising flour1 egg
½ teaspoon cinnamon
1 tablespoon agave nectar*
1 cup non dairy milk**
Method
- Mix flour and cinnamon in a bowl
- Whisk together egg, agave nectar and milk
- Combine flour mix and milk mix and stir until smooth. If you want to add fruit such as blueberries or grated apple then you can do it here
- Heat frypan over medium heat and spray with olive oil
- Drop spoons of mixture into a fry pan. The size of your pancakes is up to you!
- Cook until bubbles appear across the top and then flip pancake. Cook until the underside is golden brown.
- Serve with fruit and more agave nectar or just as a snack on their own, like a biscuit!
- You can freeze pancakes individually. They defrost just fine or reheat nicely in the microwave.
