Quinoa and Vegetable Lamb Rissoles

DAIRY FREE ∞ GLUTEN FREE ∞ EGG FREE

Oh my I almost peed my pants with excitement when I stumbled across this recipe last night - http://onehandedcooks.com.au/recipe/lamb-rissoles/. Adding cooked quinoa as a binder instead of breadcrumbs is nothing short of brilliant!  Quinoa is one of those superfoods. It is packed full of protein and high in dietary fibre. It really is so healthy for you and I was excited about the prospect of getting it into something my toddler would eat. I tweaked the recipe a little to suit us (didn’t have mushrooms so didn’t include them, didn’t include cheese as we are dairy free and added some grated veges for a truly complete meal) and it was sooooooo yummy. Oh and I also baked them instead of pan frying them for an even healthier rissole.

INGREDIENTS
  • 500g lamb mince
  • 1 brown onion, chopped
  • 1 clove garlic, crushed
  • 1 carrot, grated
  • ½ zucchini grated
  • 1 tbsp worcestishire sauce (use gluten free variety for gluten free recipe)
  • 1 egg (exclude for egg free recipe)
  • 1 cup cooked quinoa (see quickest method below)
  • ¼ cup parsley, chopped

METHOD
Preheat oven to 180 C and line baking tray with foil or baking paper so rissoles don’t stick.

Cook quinoa. You can use packed instructions but I find the microwave quickest and easiest. Quinoa expands when cooked like rice does so you cook it in the same way. You only need about half a cup uncooked (max) to make a cup cooked. Put half a cup of quinoa in a microwave safe container, added twice as much water as quinoa, microwave on high for 10 minutes. Remove from microwave and cover and let stand for around 3 mins. When you check it should have absorbed all the water. Place aside when done.


Put lamb into bowl. Add onion, garlic, carrot, zucchini, egg (if using), cooked quinoa, Worcestershire sauce and parsley.

Thoroughly mix all ingredients, with hands is best. Shape into patties and place on tray. You can refrigerate patties for half hour before cooking if you have time. This will help them stay together. I didn’t have time and I didn’t have too many problems.

Cook in oven for approx 25 mins.
