Bacon and Vegetable Muffins



I have a two year old who loves cooking.  She is a very fussy eater and I have found that the more she helps with the cooking the more willing she is to try new food.

This is one we made this morning.

Bacon and Vegetable Muffins

Ingredients:
2 ½ cups of self raising flour
½ teaspoon paprika
100g softened butter
1 small zucchini, grated
1 carrot, grated
1/3 cup corn kernels
¾ cup grated cheese
3 rashers of bacon, diced
1 egg, lightly beaten
2 cups milk

Method:
1. Grease muffin pan.
2. Sift dry ingredients into a large bowl, rub in butter.
3. Stir in vegetables, cheese and bacon.
4. Stir in egg and milk.
5. Spoon mixture into prepared pan.
6. Bake in a moderate oven for about half an hour.

I involved my toddler by letting her sift the dry ingredients, she is chief stirrer in our house and she also helped spoon the mixture into the pan.

She was so excited when they came out of the oven that she called out to her baby sister ‘Quick Georgia, come look.  The yummy muffins are ready!’

This is a great recipe for the whole family that we served with some yummy pumpkin soup on a cold winters day.
